Macaroni & Triple Cheese , Just like the old times...with a little bit more..
Don't we all just love macaroni and cheese? I know I do. I love the sticky cheesy part most, when it comes hot, freshly baked from the oven. But as time moves on, one type of cheese is not enough, so, here's a recipe where three types of cheese are used to indulge ourselves with that creamy melts of cheese inside our mouths. Brings us back ages when we were just little kids, blissful, free and no problems would mess our heads. Yeah.
Don't worry, we'll be using appropriate amounts of each one so that this meal wouldn't be burdening our health.
There are instant packs available, but instant food? Making your own sounds more hearty and edible. It's a piece of cake, why would anyone go for the instant packs anyway.
This recipe is free of any animal products, if you like you can add in chicken strips or tuna chunks.

Mozzarella, Parmesan, Cheddar. |
- A bag of macaroni(Cooked al-dente)
- 4 tablespoons of butter
- 1/4 cup of flour
- 3 cups of milk
- 1/2 cup of mozzarella cheese(shredded)
- 1, 1/2 cup of cheddar cheese(shredded)
- 1 cup of Parmesan cheese(shredded)
- 2 cups of chicken stock
- salt, pepper, tarragon and parsley( own preference)
- Melt butter in a pot, add in flour and mix well.
- Preheat oven to 375 degree.
- Next, add in the chicken stock and milk.
- Wait till boil, add in salt and pepper
- Throw in the glorious cheese (all 3), leave out some Parmesan to sprinkle on top later)
- Time to toss in the cooked macaroni ,mix well.
- Now, add in the tarragon and parsley.
- Pour into a baking bowl, sprinkle on Parmesan.
- Put in the oven, it's done if it's browned.
- Enjoy!

I've never really understood the mac n cheese mix....it's a pretty quick dish to make from scratch and it tastes so much better that way.
@briarrose:For cheese lovers, this dish is perfect, don't know if anyone have tried mixing more variety of cheeses..should try it some day myself..haha
