Pectin, sounds familiar? no? Well, pectin is a polysaccharides, or more precise heteropolysaccharide that exists in plant cell walls and fruit peels, acting as a soluble fiber when consumed. It is sometimes used in jams and jellies as gelling or thickener, to produce the gel-like substances.
